You could
also try it with brown rice or
buckwheat noodles if you prefer.
I used
buckwheat soba
noodles instead, added avocado at the end and
also added a few more herbs in there (Oregano, Thyme) and used just a hint of marble cheese since I was out of the regular parm.
I went with a simple spelt - base
noodle that I had on hand, but you could
also do
buckwheat soba, edamame / mung bean fettuccine, brown rice
noodles... spiralized raw zucchini even!
As I don't do the wheat thing, brown rice or quinoa
noodles would be a good option, though I think the nuts and miso and veggies would
also be great over whole grains - a
buckwheat millet mix, or maybe amaranth and brown rice.
Buckwheat flour doesn't contain gluten, but the Eden Foods soba
noodles are produced in a facility that
also processes foods that handles wheat.
