Roasted garlic elevates hummus from delicious to divine, in fact, I'll often throw a few
bulbs of garlic into the oven when I am cooking and work them into the dishes I am making.
Garlic plants propogate via their cloves: the goal of each clove is to send up a shoot, which, upon achieving leafy plant stage, will nourish the clove, eventually producing an entire
bulb of garlic from that single clove.
It seems wasteful to turn on the oven just to roast a
few bulbs of garlic, so I always roast them alongside something else.
