I wanted to pipe tall mountains of mocha «
butter» cream goodness, but the
frosting never
really kept its shape.
The only thing I left off was the
frosting, because I
really suck with that sort of thing, but man - thing just slathered peanut
butter and jam all over it and started pulling «homggnomnom» noises.
This cake
really begs for a
frosting or a glaze of some sort, and what goes better with chocolate than peanut
butter?
Love the
frosting — you can't
really taste the avocado... I say it can compete with any fancy
butter cream
frosting that packs a 1000 calories / bite.
Which is not to say, of course, that the cupcakes are fat - free: the
frosting is mostly vegan
butter, and it is marvelous, but if you're
really bent on taking the fat out of the picture, you could just skip it and serve the cupcake nude.

I decided that even though the brownies are
really good on their own, some Peanut
Butter Frosting would
really put them over the top.
