though muffins work too, donuts are just more happy - making somehow I love coconut
butter for
frosting, you barely need to sweeten it with that natural coconutty flavor too!
One thing I do different
though is this: because I adore ooey gooey rolls and am not a huge fan of
frosting, I DID use ALL of the sugar /
butter / orange filling and just used a light coat of
frosting on top, applied while still warm so it would melt around good.
And instead of a bundt cake - I lent my pan out and never got it back: (I poured the batter into
buttered and floured cupcake tins, baked for 25 minutes (
though I should have taken them out a few minutes sooner) turned them out, kept them «upside down,»
frosted the bottoms when they cooled and ended up with 24 delicious mini-cakes!
If you are like me
though, and don't like as much
frosting, use 2 oz cream cheese, 4 tbsp
butter, 1 tsp vanilla and 1 1/4 cups powdered sugar.
I decided that even
though the brownies are really good on their own, some Peanut
Butter Frosting would really put them over the top.
