I know I've made a gluten - free
banana and chocolate
banana bread before, but this time, I've swirled some lovely peanut
butter to the batter and poured a pecan praline sauce
on top because why not?
Most of my
banana bread recipes are healthy, use minimal sugar, no
butter / oil, and focus
on substitutes.
I already have a
banana bread recipe
on this site but it is really just a modified version of the lovely, sugar loaded,
butter - infused loaf that I grew up with.
I love

on their own, so combining all three of them is simply amazing.

banana bread is super easy to make, but unfortunately when testing the recipe, I made it about as difficult
on myself as possible.
I have been
on the hunt for a good
banana bread recipe — specifically one that doesn't come out like a heavy dough brick, doesn't call for a block of melted
butter and isn't too sweet — and this totally fit the bill!
This

Using the above ratio and following Ruhlman's
banana bread recommendations
on page 72 of Ratio, I reduced the liquid to 6 ounces total and browned the
butter.
I enjoy my nut
butters on bread, in oatmeal, slathered
on fruit like apples,
bananas and plantains, in pancakes, with dark chocolate for a little dessert or right off the spoon.
