by cooking fish.

I had already been
cooking for many years but when I took away the usual constraints» of how I put a dish together around a piece of meat or
fish I began
cooking in a totally different way, focusing on flavour, texture, colour and layering flavours, citrus and spices to create amazing joyful satisfying food, led
by the new amazing way I felt but also my deep love of food and the knowledge I'd gained through years in the kitchen.
I also mix and match the healthy eating because I still love
fish, eggs and the occasional organic animal protein and then I mostly
cook from the H&MH cookbook (also inspired
by your blog).
By now I am almost fully pledged vegetarian (I still eat
fish sometimes though, but that need decreases) As a former meat eater I enjoyed Golabki, Flaki and Pierogies, both are polish cuisines because even though I was born in Germany, half my heritage (specific: my mother) comes from Poland and I grew up with traditional polish cuisine, which still counts as comfort food to me (Omg I need to mention I tried so often to make Bigos Vegetarian without sacraficing the taste, but it's still a challange) Bu talso my other half of heritage come from Hungary, I also enjoy traditional Hungarian food like Langos and Palacsinta (so good) Basically I've been brought up with no fear from anything new, I have no prejudices, try everything I can and enjoy home
cooked meals made with local basic ingridients the most!

This was initially inspired
by one of my many
cooking magazines — and the fact that I am getting sick of simply pan-frying
fish.
Another great method to prepare
fish is
by simply salting it before
cooking.
I too have always been intimidated
by fish because I wasn't sure how to
cook it and my husband and I like to eat it!
You can use any white
fish; even if you have less than a pound of
fish, you can make up the difference
by adding some
cooked shrimp.

We
cooked up some recipes from the book, including the
Fish Taco Buffet, inspired
by the Spring Break the two of us spent together in Costa Rica circa 2007, and the dinners we created there in our rented condo's oven.We also added one of our favorite recipes, Mini Pulled Pork Tacos with Fennel or Red Cabbage Slaw, elegantly tied together with a chive!
