I had a 12 oz bag of
cut - up butternut
squash from Trader Joes, so significantly reduced all quantities
by 1/6.
Split butternut
squash in half
by cutting it right down the middle.
This curry is an easy weeknight meal and I like to plan ahead and
cut the prep time
by cooking the butternut
squash the night before I actually make the curry so it's quicker to assemble.
Start
by cutting off the bulbous end of the
squash (pictured on the left above).
Directions Preheat your over to 425 F. Get the butternut
squash started first
by cutting it in half lengthwise, drizzling with olive oil and placing in the oven on a dish to bake for about 40 minutes, or until soft.
