Grandma's Molasses was having a recipe contest, and since I've never created my very own cookie recipe before, I seized the moment, thought about flavors, and then inspired
by my previous experiment with Orange Mocha Muffins, I created these Molasses - Orange Cookies with
Espresso Glaze.
This is how she does it: she begins
by muddling an orange peel with melted dark chocolate ganache, then pulls a shot of
espresso through cinnamon that's been dusted on the machine, then tops the finished product with steamed milk.
I used Wild Friends Vanilla
Espresso Almond Butter, and improvised the choc chips missing from my pantry
by chopping up 3 Guittard Semi-Sweet baking bars and topped off the 1 cup needed with Cacao Nibs.
I thought that the cake would roll up just fine even though it was made
by separating the eggs and folding the whipped egg whites back into the yolks that had been combined with cocoa powder, melted chocolate, and cooled
espresso.
Can easily be changed to vanilla, lemon or orange versions
