A quick question: in the image showing the
dough being
placed in the pan, (has a very small depth - of - field and it's thrown the
dough - base out of focus), have you pricked the
dough base before adding the filling ingredients, or are the dents caused
by the fingertips as the
dough is pressed onto the pan?
Remove the
dough from your mixer and add the almonds and knead a little bit

Place the ingredients in your bread machine in the order recommended
by the manufacturer, and program the machine for white or basic bread, or for the
dough cycle.
Preheat the oven to 350 degrees F. Scoop the
dough by the scant 1 / 4 - cup - full, roll into a ball and
place on the sheet pan about 2 inches apart.
Punch down
dough and
place in a greased 13 -
by 9 - inch baking sheet.
If any holes or tears appear, patch them
by placing small pieces of the reserved
dough scraps over the holes, let stand for a few seconds, and then gently tap them with your finger until they adhere.
Place dough on prepared baking sheet and, using moistened hands, shape into two parallel 10 -
by 3 - inch rectangles, spaced about 3 inches apart.
Place dough twist onto prepared baking sheet and repeat with the rest of
dough,
placing side
by side on baking sheet.
Place sweet potato mash in a food processor fitted with blade, add coconut oil, flours and salt, pulse until a
dough ball has begun form, then stop, before it becomes over pureed (this can be made
by hand, make sure the sweet potato is mashed until pureed with no lumps).
Place floured fists underneath the
dough and gently pull sections of the
dough out to form a very thin rectangle about 2 feet
by 3 feet (60 cm x 90 cm).
On a parchment paper - lined baking sheet,
place a heaping tablespoon of
dough for each cookie and flatten slightly with a fork or
by hand.
Once your
dough has risen,
place on a well floured surface and start knocking the air out of the
dough by folding itself in half repeatedly.
Press the
dough evenly into a oiled jelly - roll pan, 15 1/2
by 10 1/2
by 1 inches, and let it rise, covered loosely, in a warm
place for 1 hour, or until it is almost double in bulk.

dough rise over the next 1 hour (it should have doubled
by then).
If working
by hand or stand mixer,
place the kneaded
dough in a lightly greased bowl, cover with plastic wrap, and allow to rise for 60 to 90 minutes, until quite puffy and nearly doubled.
When all of the
dough has been used, cover the pan in a damp towel or plastic wrap and again, set in a warm
place for at least 90 minutes until increased in size
by at least 50 % again, filling the pan that they are in.
