I have used spaghetti squash simply
by roasting it in the oven and then making the strands part of my meal with meat or veggies, and cheese.
It's the first time I've cooked cod in a long time that hasn't come out overdone, and I credit the technique of pan searing followed
by roasting in the oven for that.
My favourite way to cook it is
by roasting it in the oven with a bit of oil, salt & pepper.
If you're using shrimp, you can make a superb stock with the shrimp shells
by roasting them in the oven, then deglazing the pan with a little white wine.
The sweet potatoes need to be cooked in advance
by roasting them in the oven.

The walnuts were replaced
by a mixture of pecannuts and slivered almonds (lightly
roasted in the
oven to enhance their flavours).
When you're going so rustic that you're short on stove top space, this recipe also works pretty well
by sticking the smashed potatoes
in the
oven and
roasting for a few minutes.
