Chris Kresser: I don't think there's really much of a FODMAP issue with
sauerkraut because the sugar in
cabbage is what is the FODMAP component, and when
sauerkraut is made that sugar is consumed mostly by the bacteria, so there shouldn't be much sugar left in
cabbage,
which means that it wouldn't really be a FODMAP anymore, so I do think
sauerkraut is a good starting place for a lot of people for that reason.
