I love gingerbread in
just about any
form it comes in, from cookies to
cakes to pancakes, and usually look forward to cooler weather as a sort of permission to bake anything spicy.
Be sure not to over mix the batter because it will also cause gluten to

cakes) and your cookies will be tough.

At first I thought it was
just sugar granules that didn't melt but then when I went to ice the
cake it was like the icing had
formed a crystallized layer on the bowl and when you eat it it's crunchy.
