Alaina, who I met at my very first Molly on the Range book tour event, made the cutest ever
cake earlier this year and added the marzipan butter
from MOTR (which is essentially your basic ingredients for marzipan, blanched almonds and sugar, blended into oblivion until silky and spreadable) to the
frosting.
Remove the
cake from the fridge and spread the remaining
frosting evenly over the
cake.
There is no denying that the
frosting is delicious, but I've had
cakes where there is so much
frosting that it starts to take away
from the
cake — and carrot
cake is delicious even without
frosting.

As I tend to do, I started off with a boxed
cake mix, doctored it up a bit and topped the whole thing off with a made
from scratch
frosting.
Let cool on a wire rack before removing the
cake from the pan and let cool completely prior to
frosting.
For best results, cool the
frosted cake in the fridge for an hour to keep the ganache
from dripping all the way down the sides.
Remove
from the fridge and
frost just the sides of the
cake in white buttercream, leaving the top empty.

frosting the
cake, gently pull the waxed paper strips
from under the
cake and discard.
