I wanted to bake
my cake in square pans but one of them seems to have vanished into thin air.

I baked it
in a 9 inch
square cake pan (couldn't find my bread
pan) for about 25 - 30 minutes, and the result was amazing!
Cool for about 30 minutes
in the
pan then use the parchment to lift the
cake out and transfer to a wire rack to cool completely before cutting into
squares and serving.
To make the topping, place the brown sugar and water or butter
in an 8 - inch (20 cm)
square cake pan.
Instead of a
square cake, you can make individual coffee
cakes in a greased 12 - cup muffin
pan or even smaller, bites sized mini-muffins
in a mini muffin
pan.
I made your chocolate
cake in an 8 ″
square pan and added 1/2 cup gluten free mini chocolate chips — YUM!
Any tips for doing this instead of
square in a round tin
cake pan (28 cm)?
It's likely the
cake will stick to the bundt
pan (no matter how much you oil / cacao powder it), so do yourself a favor and bake it
in a regular
pan (loaf, round,
square).
This recipe would also work nicely
in classic 9 × 13 inch
cake pan, but I have something against baking
in squares and rectangles.
The top was crinkly and brownie like so we served it upside down so it would be prettier as a
cake but I might try this
in a
square pan and call it brownies next time.
