What would make these carrot
cake muffins more nutritious?

They're using the classic mixture of almond flour and coconut flour together to get the
muffin part right, and they have plenty of carrots, nutmeg, cinnamon, and
more to get the carrot
cake part right.
Well
muffins have a rougher bigger crumb, and
cakes have a softer
more delicate crumb.
It's a great book, but sadly the ratio gave me baked goods that tasted
more like
cake than
muffins.
Line

I think all
muffins fall into one of two categories: those that are basically mini
cakes, and those that are
more substantial and not just an excuse to eat dessert for breakfast.
The
cake flour substitution could've made them
more muffin - like.

muffin... highly recommend I have tried it as a
cake and it comes out
more dense and not as fluffy as I'd like, so yes but not ideal.
