Made the cashew coconut cream frosting and I used a little extra
honey and whipped it up in our magic bullet it turned out pretty good, then I frosted the
cake with it and sprinkled shredded coconut
over the frosting and put the
cake in fridge It was a wonderful frosting thanks for sharing it.
However even though that
honey cake would be a perfectly great dessert on its own I find that people's prejudices against
honey cake keep them from even trying a piece, and I always have a ton left
over.

I ended up sticking to it for
over 6 years now and I actually really enjoy it:)(still not 100 % gluten free or vegan (I'm good with spelt, rye and we eat butter,
honey and fish) but just a few months ago, I tested myself again (I did this every 4 - 6 months and ate a wheat and egg
cake AND I am happy to report that I didn't have my usual symptoms — I felt normal, no issues:) Mind you, I didn't have too much but a small slice that was homemade from organic ingredients so I felt comfortable that there's no artificial ingredients and preservatives.
I baked this
cake tonight with Guinness (as others have noted, it took a good 15 mins to boil down and was at risk of boiling
over at the start, so keep an eye open), non-fat Chobani yogurt, and the last of my maple syrup topped up with agave syrup and
honey.
The
honey, the whiskey, the spices... I had some friends
over for dinner, and this
cake had them silent except for the moans of satisfaction.
What do you think of doing a
honey syrup glaze to pour
over the top (perhaps after stabbing the
cake with a skewer a million or so times)?
I was thinking apple in the
cake, then a little apple juice mixed with
honey to make a nice gooey sauce to pour
over it... apple +

Remove the
cake from the oven and cut it into pieces while it is hot, then immediately poor the cooled
honey syrup
over the
cake and let it soak in for at least 30 minutes before serving.
