We had this over a mint chocolate cake that was quite simple, just the Fragrant citrus
cake with cocoa powder instead of ground almonds, and mint extract in the place of all the citrus.

otherwise i think the
cake needs a hit of more - intense chocolate, and may do it again
with a recipe that includes melted chocolate (here's the point where you say «you idiot, use better
cocoa powder»).
I topped the
cake with sifted
cocoa powder but that was more because it looks pretty.

cake and made a few tweaks to it, but unfortunately it didn't come out as expected: — LRB - Instead of using whole wheat and all purpose flour i used white spelt flour (i always substitute all purpose
with white spelt, there have been no problems so far), and replaced the natural
cocoa powder with melted 70 % chocolate.
At this point the sifted
cake flour (sift the flour then measure it), mixed
with cocoa powder (regular unsweetened or Dutch - processed), sugar, and salt (to prevent the flour from clumping), is folded into the beaten egg whites.
It's so interesting how you tried to mimic the flavour of the red velvet
cake with using
