I not only love to snack
on cashews, I use them in so many different recipes:
cakes, brownies, salads, dips, and spreads — you name it.
I tried this recipe
on the Saturday (in preparation for Mother's Day) and ate the first «
cake «plain and then the second with a dollop of super thick melted
cashew cream, oh yeah... I'd recommend going for the topping!
I was rolling out cookie dough for a raw Almond Strawberry Linzer cookie I still haven't decided to post

In addition to the
cashews & almonds I used 1/2 cup of crumbled (brown) rice
cake & threw some sesame seeds
on top --[I didn't feel like another trip to Whole Foods and its cheaper than pecans].
And I had all these
cashews soaking, so I figured I should try to make a
cake with them,
on the fly.
This
cake is great
on its own, but I also like to serve it frosted with the
cashew frosting in my ebook.
I honestly want to make ALL the recipes but next
on my list to try are: Thick «n» Hearty Tomato Sauce, Tofu in
Cashew Ginger Sauce, Red Lentil Hummus, Apple Pie Chia Pudding, Vanilla Bean Chocolate Chip Cookies, Chocolate Sweet Potato
Cake.
I love the addition of the lemon
cashew cream, I bet it's absolutely delicious
on top of that
cake.

This party is all about colorful veggies, bean dips and a dessert, that's one of my absolute favorites: a vegan and gluten - free mud
cake, that is sinfully delicious thanks to the
cashew chocolate frosting
on top.
Method — Get a large bowl and add the dried fruit,
cashews and carrot — Give it a good mix, then pour over the cold tea — Cover the bowl and leave the mixture to soak overnight — In the morning preheat your oven to 150C and prepare a large
cake tin by greasing it well and lining with baking paper — When you're ready to start cooking add the ground nuts and coconut flour to your bowl of soaked loveliness — Give it a big mix — In a separate bowl, mix the eggs, vanilla and coconut oil together — Pour the wet mixture all over the bowl of other ingredients and give it a good stir — Pour the batter into your tin and brush with a tbsp of coconut oil — Bake for an hour, ensuring that the
cake is completely covered in baking paper — Take out of the oven and allow to cool completely — Store in an airtight
cake tin and decorate as you please
on the big day

Some vegan friends of mine (who are also
on the candida diet) make a lovely
cashew butter / cream filling for
cakes, which seems to work for them.
The past couple weeks I've had a new awakening to rice
cakes again, but it can get a little boring just slathering
on some nut butter (
cashew FO LIFE) and chowing down.
