Pumpkin makes
a cakey cookies and that isn't as good.
The German town of Nuremberg has been famous for its lebkuchen since the late 1300s; the soft,
cakey cookies are traditionally made with several spices, candied citrus peel, hazelnuts, and almonds.
They're light,
cakey cookies, which unfortunately makes it easy to pound a dozen or so in a sitting, but hey, what are holidays for?
I don't know if it was the butter that did it, but they spread out into perfect little
cakey cookies.
A quick stir - in of grated carrots not only makes these easy drop cookies reminiscent of spicy carrot cake, it also adds sweetness and keeps
these cakey cookies moist.
* For
cakey cookies use softened clarified butter and coconut oil instead of melted.

I made this exactly to the recipe but both my
cookie and my brownie came out super

I've made a lot of vegan
cookie recipes and I love that these aren't
cakey at all.
I started my search for this recipe by looking for pumpkin blondie recipes — I wanted something that had the seem feel and texture of a brownie, and not
cakey or something like a
cookie bar, so I wanted to eliminate any baking soda or baking powder.
I always use bananas in my brownies, and in some of my
cookies too, but I substitute 1/2 banana for one of the eggs in whatever recipe I'm using because I find they get too
cakey otherwise.
Banana for example, does not make a good sweetener for
cookies unless you're looking for a very
cakey, soft
cookie.
Adding an egg would simply make the
cookies far too soggy and indeed, very
cakey.
These
cookies are a cross between a chocolate
cookie and a pecan brownie, the outside is crisp and the inside
cakey!
However the
cookies are a more
cakey than i like so i would not make these again without altering the recipe to create a more soft
cookie texture
The
cookies are
cakey and moist, bananay and chocolatey and nutty — exactly the kind of
cookie I crave when I need a boost.
Only downside is, they came out very
cakey and soft, not like a
cookie.
The only solution is to gnaw that gooey,
cakey,
cookie - brownie - hybrid from each finger.
