If you don't want to use cane sugar then definitely feel free to substitute a sweetener of your choice.
If you don't like your dessert to be too sweet or are closely watching how much sugar you consume, 3 tablespoons of granulated pure cane sugar should be plenty.
Unfortunately I don't know any alternatives, but you could try adding an additional 2 tablespoons of cane sugar in place of the syrup and increasing the cream of tartar to 1/4 teaspoon.
