The question of thickening sauces is one of the hurdles I face every time I put up a recipe post — it's become a bit of an internal struggle (as seen with last week's beef and broccoli stir fry recipe, in which I hesitatingly called for a teaspoon of flour as a
thickener) because while adding a bit of flour or cornstarch to a larger recipe may not drastically impact the
carb count, it does complicate the consistently Primal message I try to convey.
In this smoothie, the spinach will turn it green and add a vitamin one - two punch without tasting «green»; the bee pollen will help you ward off all of those pesky allergens that seem to be plaguing us this time of year; the chia seeds add omega fatty acids and additional
thickeners to the smoothie; and the protein powder adds a bit more creaminess and some protein to balance the
carbs.
Optionally, you can use a
thickener: 1 tbsp ground chia seeds (+ 0.1 g net
carbs per serving) or arrowroot powder (+ 1.2 g net
carbs per serving) mixed in 1/4 cup water or use cream & egg yolk mixture like I did in my Pork & Kohlrabi Stew.
I'm pretty sure arrowroot powder is a no for GAPS, but if you're not trying to stay away from
carbs to that extent, it does work well as a
thickener — and it makes great cookie kind of things.
Plain, nonfat Greek yogurt is definitely a favorite of mine — and I don't usually see high numbers of
carbs in any brand (although I do check for
thickeners).
It just seemed to be impossible to make creamy gravy without the extra
carbs from flour or other
thickeners.

The truth is that yes, when some traditionally gluten - containing products get morphed in to a gluten - free version, they become «worse» in that the GF version may be lower in fibre, higher in refined starchy
carbs and possibly also higher in sugar and / or artificial sweeteners or
thickeners, in order to mimic the effect of the gluten — which gives an elasticity and texture to food.
