I preferred the one with the date
icing and coconut — the coconut added awesome texture and made the bars resemble the flavors of a typical
carrot cake.
Allow the
carrot cake to fully cool before spreading on the
icing.
Fresh
carrot and apple plus a splash of bourbon boost the flavor of the layers, while the browned - butter glaze is, well, the wildly delicious
icing on the
cake.
To me the date
icing really made these vegan
carrot cake bars — it gave the perfect amount of sweetness to the not super sweet bars, and I just love the combination of textures — the firm but tender bars with the silky smooth date

Since I was starting off my Whole30, I tried to steer clear of the desserts section, but couldn't help but notice a luscious - looking dairy - free chocolate
ice cream, chocolate brownie caramel cups, and a gorgeous
carrot cake with dairy - free «cream cheese» frosting.
