Oh, and working on a recipe for
cashew butter chocolate eggs using the vanilla collagen fuel in the filling.
This recipe is a variation of
the cashew butter chocolate chip cookies that I posted last summer.
These cashew butter chocolate chunk cookies are crispy on the outside, chewy on the inside and overflowing with dark chocolate chunks.
Some of you may remember teff from my turmeric
cashew butter chocolate chip cookies.
Store your collagen
cashew butter chocolate cups in an air tight containter in the fridge so it doesn't melt!

Anyway, a big disappointment so I ended up making my normal raw
chocolate recipe and filling the eggs with the
cashew butter that was really nice.
Mould the
chocolate using the back of a tablespoon so that all the sides are covered and there is a shallow space left for the
cashew butter.
So, this tart: imagine a buttery, slightly chewy sesame seed crust with velvety, cacao
butter and
cashew - based
chocolate and matcha layers on top.
The white
chocolate drizzle, made with cacao
butter and
cashews, adds a nice, extra bit of texture to the creamy berry base, but the creamsicles are great on their own as well, in case you don't want to bother with the drizzle.
Add a heaped teaspoon of
cashew butter into half of the
chocolate moulds.

The brownie is made with frozen bananas, almond milk,
chocolate protein powder (again, if you have a plain protein powder, you can add cacao powder and maple syrup or stevia), and the peanut
butter cookie crumble is made with coconut flour, vanilla protein powder, sweetener, cinnamon, almond or
cashew butter, maple syrup and dairy - free milk.

Try it in curried carrot ginger and orange soup or vegan ginger

cashew butter and caramel.
This time around I used homemade
chocolate cashew butter in place of the almond
butter because it's what I had on - hand and they tasted just as good if not better.

butter, melted 1/2 cup firmly packed light brown sugar 1 large egg 1/2 teaspoon vanilla extract 3/4 cup mini semisweet
chocolate chips 1/2 cup finely chopped walnuts (pecans, almonds,
cashews, hazelnuts or any other nuts of your choice) 1/2 cup dried cherrie, coarsely chopped (raisins, currants, cranberries apricots or any other dried fruit of your choice can be used as an alternative)
this made for a perfect cookie — the trail mix has
cashews, almonds, peanuts, dried cherries, peanut
butter chips, and
chocolate chips.
I recycled that recipe here for the white
chocolate coating with just a teeny tweak to use coconut instead of
cashew butter (along with cacao
butter).
Fab flavour combos, orange white choc and cranberry always go great together — I also used raw honey in place of agave as I believe its a more natural, unrefined sweetner (agave isnt as innocent as you might think — read up about it) As for those of you who wanted to know about the white choc chips, well I avoid all dairy and refined sugars so I simply made my own, its dead easy — simply combine pure raw cacao
butter (gently melted) with a pinch of celtic salt, a little extract of vanilla and some raw
cashew butter, then freeze in a suitable container before breaking into chunks!!!!! yummy You can make dark
chocolate chips even easier by melting pure coconut oil and stirring in a little vanilla, honey and raw cacao powder before freezing!!!

Elana, Its funny you posted this... I was thinking last night about your truffle series and I was toying with the idea of cooking the almond
butter / agave mixture down a little more (from the turtle recipe) and scooping and forming it into small balls with a
cashew or hazelnut in the middle and coating them in
chocolate and more chopped nuts.
