There is
cashew butter in the recipe, but, I think you can sub for more coconut oil and it will still work — just might be a bit less chewy.
The first time I used it there was
cashew butter in the recipe too so I thought the lovely rich flavor was from that, but there is something about the flour itself that has a sweet dessert - y - ness (so not a word lol) too.
The reason I'm asking is because I recently started using raw
cashew butter in recipes (really love it, especially for vegan mac N cheese) and made my own batch, but I only used raw cashews and a little salt and wanted to know how long I can keep it in the fridge!?
Do you have any recommendations for replacing cashews or
cashew butter in this recipe or others?

I'm not sure if this was down to using homemade almond
butter (previously used
cashew butter), not sifting the raw cacao or over-mixing
in the Magimix — any thoughts on this would be appreciated (although this may be better directed at Madeleine as the
recipe originated from her.)

I understand if it doesn't work for you though
in my
recipes I often use it for the specific sweetness or stickiness, so sometimes nut
butters (almond,
cashew or tahini) can work as a substitute or other oils (olive) or other sticky beauties (dates, figs etc).
Tip # 1: Using store - bought
cashew butter will not work with the
recipe because the consistency is much thinner than making it homemade
in a food processor and the mixture will not be thick enough to form the shape of a cookie.
I'm gingerbread obsessed and I have extra
cashew butter that I wanted to use
in a
recipe.
But hey, while you're waiting, go get some
cashew butter, and sub it
in your favorite peanut
butter cookie
recipe.

Elana, Its funny you posted this... I was thinking last night about your truffle series and I was toying with the idea of cooking the almond
butter / agave mixture down a little more (from the turtle
recipe) and scooping and forming it into small balls with a
cashew or hazelnut
in the middle and coating them
in chocolate and more chopped nuts.
I followed this
recipe word for word and when the
cashew paste got into pan with the sugar and started heating up, all the fat separated out and it left a clump of nut -
butter and sugar sitting
in a pool of oil.
