It's not just cauliflower in this one: carrots give this
nacho cheese some authentic looking orange color, and
cashews add richness.
This vegan
nacho cheese sauce gets it's creaminess from a blend of vegetables and
cashews and it's incredible flavour comes from a whole grab bag of ingredients.
Top with
nacho cheese, taco meat, your toppings of choice (I used tomatoes, olives and green onions), a drizzle of
cashew cream and some guacamole.

Cheese is a boon: a fiery little
cashew puck with pickled chili peppers, green onion, and carrot (for color).
As for the
cashew cream, it's made with pumpkin puree which gives it the classic
nacho cheese - like color.
A cucumber radish salad stuffed inside a sweet bell pepper and topped with raw vegan
nacho cashew cheese.
I recommend their
nachos with goji - berry
cashew cheese and their vegan
cashew ice cream — it was out of this world.
Finally, add
cashew «
nacho»
cheese and dip into fresh pico.
