this is very similar to what we call Chikki... a sweet treat in western india... readily available in Bombay / Mumbai... and also in indian stores
here in the US... u can use jaggery... other kinds of sugar... or even some honey to mix in the syrup... for the
nuts u can use
cashews, almonds, seasme seeds instead or in combination with peanuts... u could try experimenting with different layers of thickness... and even try a mould that would make it look more like a hersheys bar... easier to break off without creating too many crumbles

FYI, you can also use an organic probiotic bill to and put it into the
cashew cream /
nut cream / or
nut free hemp (any) seed cream... to to turn it into yogurt / if you can't buy real Kefir Bacteria (Lactobacilli bacteria)- Its not dairy but is used to make milk into Kefir and after its used to turn milks into yogurt, you can strain out the original chunks of bacteria (which is what we do
here in Greece and then put the Kefir in the freezer so you can perpetually re-use it — while waiting for yogurt to become cheese.

And as for the
nuts — I have made these with classic dry roasted peanuts (as done
here) as well as raw

Here are some suggestions for substitutions for those ingredients... chickpeas: any other bean you like / can eat cherries: blueberries or strawberries avocados: this is the toughest one, but you can try subbing
cashew cream (soaked
cashews blended with water) for the avocado in the salad dressing and pudding cauliflower: Brussels sprouts or broccoli apple: pear, orange, or pineapple sunflower seeds: almonds or any other
nut (this would make the cleanse no longer
nut - free, but if you know you have no sensitivity to
nuts, it's no big deal) Hope that helps!
