I did not have any coconut flour on hand and had just finished «
ricing» some
cauliflower so I decided to use that as a binding agent and it
worked great!!
I used
Riced frozen carrots and
cauliflower instead and it
worked out beautifully.
I really would not call it a substitute for
rice — the flavor of the
cauliflower is mild and
works well with the spices, but it is still
cauliflower — but that being said it is a delicious
cauliflower dish, and could easily be adapted for many other spices and flavors.
Would the frozen
cauliflower rice in steamable bags would
work — the plain, unseasoned kind?
You cook the quinoa (
rice, millet, or
cauliflower «
rice» would
work well, too), and while that is happening, you prepare the other ingredients.
For serving I love pairing the curried eggplant with
