David, I have tried making this salad twice and the second time I blanched
the celeriac before dressing it.

Then peel the
celeriac — sometimes it's easier to cut it in half
before peeling, as it makes it easier to hold.
If your
celeriac has lots of bumpy roots at the top it's also easier to slice those off
before peeling.
I dislike celery but bloggers have persuaded me to try

before finding a soup recipe that, with a few alterations, incorporated both the
