This is another tasty version of shrimp and grits, this time with grits made
from celeriac root, which hardly gets any love because it's so ugly.
So I ran the nutritional calculator again, and I got total sodium 12 % (278 mg), most of which comes from the
raw celeriac root itself (9 %) and the rest is from the pinches of salt.
When bubbling on the stove, hints of flavors
from celeriac root, parsnip, sunchoke, lemon, fresh oregano and white wine fills the kitchen.
1 medium onion 2 carrots, peeled and chopped 1 parsnip root, peeled and chopped 1/4

Today I did couscous from Algeria, red beets, golden beets, carrots, onion and
celeriac root.
Add the onion,
celeriac root, carrots, and celery and saute 10 minutes, stirring occasionally.
Add in the tomatoes, sweet potato, fennel bulbs, and
celeriac root.
