We loved the recipe twist — none of us had tried
celery root and it was surprisingly delicious even though we aren't big fans of
celery — plus, Becca opted to add chili powder and 5 spice
for a touch of complimentary warm spice.

Place the onion, carrots, garlic,
celery and
celery root or potato into a large saucepan with a couple of tablespoons of water and water saute
for approximately 5 minutes.
Here is my version of a recipe
for celery root puree.
Add 1 cup of water, cover the pot and cook on medium - low
for about 15 - 20 minutes or until
celery root is soft.
Saute
celery root, leek and salt and pepper in olive oil over medium - low heat
for 10 minutes or until leeks are soft but not brown.
-- 125 g rolled oats, soaked in lukewarm salty water
for 30 minutes — 1 can of beans, drained and puréed — 80 - 100 g whole wheat bread crumbs — 1 onion, chopped — 3 cloves garlic, chopped — 1 medium carrot, chopped — 1/2 a medium sized
celery root, chopped — small bunch of parsley, chopped — 1 tablespoon fresh lemon juice — 2 teaspoons Dijon mustard — 1 teaspoon oregano — salt, pepper — olive oil — serving: salad, mustard, ketchup, sliced red onion, sprouts, ciabatta or rolls
One pound of shank cross — cut was quite enough with plenty of vegetables (3 carrots, 1 parsley
root, 1/2
celery root, 1 kohlrabi, 1 onion (halved), few kale leaves, 1 tsp tomato pure, salt and black pepper to taste) slowly and gently boiling in 12 cups of water
for 3 hours made a beautiful «bouillon «easily turned into healing, comforting, boosting soup once strained and combined with favourite noodles.
I'll always
root for the underdog, so I decided to explore
celery and try some recipes that give it a starring role.
I don't care
for fennel so I substituted
celery root and I added halved grape tomatoes.
Place
celery root in a medium sized sauce pan filled with water and boil until
for tender, 10 - 15 minutes.
Toss
celery root in remaining butter, season, and cook in the same manner as the potatoes,
for 15 to 20 minutes.
Add the cubed
celery root, the ground coriander, and the diced garlic cloves to the leeks, and cook
for a couple of minutes.
I was looking
for a recipe to use
celery root since I received it in my CSA.

Roasted garlic cauliflower
celery root mash is an easy comfort food side dish — a great substitute
for mashed potatoes!
Add the
celery root,
celery, and onion and sauté
for 6 to 10 minutes, stirring often, until soft but not brown.
Don't be afraid that your more traditional family members will stick up their noses at the
celery root and parsnips — these are still very much mashed potatoes — and they're the perfect foil
for gravy (like my delicious vegan gravy!)

for seasonal
root vegetables; here I have sautéed potato, sweet potato,
celery and beets, drizzled them generously with chili oil, and finished with the earthy and nutty tahini.
You can make these pancakes with potatoes
