The crunch of the celery was a nice addition, but I still like a little
celery seed for an extra punch of flavor.
I made the «shrimp cakes» subbing shiitake for the oyster mushrooms and
celery seed for the Bay seasonings.

Two, the recipe calls
for fresh fennel bulb but every single time I've made it, I swapped the fennel
for celery (because that's all that was available at my grocery store and I was too lazy to go fennel hunting around town) and have never felt it lacking in anything, as the
celery delivers the same level of crunch and spring - like taste, leaving the fennel
seeds and Italian sausage to bring in the truer fennel - y flavors.
There is definitely something to be said
for celery seed.
I saute a diced onion & a cup or so of
celery, incl leaves, in grape
seed oil, add garlic (quite a bit) 1/4 tsp cayenne pepper, two bay leaves, two tsp balsamic vinegar, one scant tsp sugar, 1/2 c chicken stock, 1/2 c water, one cup diced ham, & the greens and cook it slow in the oven and eat it over rice,
for two days.
The rub (good
for 10 lbs of ribs): 1 bulk of garlic 1 tbsp of Sea salt 1 tsp of cayenne 2 tsp of paprika 2 tsp of black peppar 2 tsp of onion power 2 tsp of thyme 2 tsp of majoram 2 tsp of

Whether you cleanse
for 1, 3 or 5 days, you should only consume the soups and broths — but you can snack on pumpkin
seeds, almonds, cucumbers and
celery if you really feel the need.
