Flake with a fork in
the center of a roll to see if it's done.
The dough toward
the center of the roll should be soft but not to doughy and not hard.
I just cut about a 1 1/2 inch wide slit, scooped most of
the center of the roll out, and filled them.
I would recommend using your serrated knife to cut through all of the sliders, and placing a toothpick in
the center of each roll & meatball.
Proceed with shaping the bagels: Push a hole through
the center of the roll with your thumb and stretch out the hole to 2-1/2 inches in diameter, making sure that the resulting ring has a fairly even thickness all the way around.
