In a few words, clean eating can be described as avoiding
certain foods and beverages and concentrating on eating
high protein food and low
glycemic index (low GI)
carbohydrates.
Although the researchers aren't
certain why this is, they suggest that it may be in part because
carbohydrates with a
high glycemic index lower HDL (or good cholesterol) and raise triglycerides less readily in men than they do in women.
For example, if you mix a
high glycemic index carbohydrate with an extra source of fiber, healthy fats, or even
certain proteins, many times the blood sugar and
glycemic response will be slowed down considerably by the way you combined the food.
