Thursday: Girl Scout Gumbo (hamburger, vegetable soup,
cheese, onion, green pepper, served on Fritos — I have a gluten and diary free
version), Milky Way Salad (Milky way pieces, apples, bananas, cool whip — We have vanilla coconut - based yogurt with apple slices and gluten and dairy free chocolate chips),
box oven brownies.
Mac and
cheese is simple to make from scratch (no need for
boxed versions that are full of additives), and is very forgiving in that you can't really mess it up, even when experimenting with it.
The yummy dish reminds me of a collision between French toast and a lunch
box ham sandwich — the traditional
version, a favorite during my childhood, is made with ham and
cheese book - ended between white bread, dipped in an egg mixture and then pan fried or even deep fried (gasp) with raspberry preserves and powdered sugar to garnish!
However (embarrassingly) she always liked the
boxed mac &
cheese more than any homemade
version I served her.
So put away that
box of mac and
cheese and get ready to create your own homemade
version.
Maybe it's like the craving for Kraft mac - n -
cheese or some other packaged food that of course doesn't taste better than the real thing but nothing satisfies the urge for the store - bought
version either (not that I crave squishy powdered
cheese pasta, brownies from a
box, or frozen pizza....
What I love about this vegan Mac and
Cheese is that it's just as fast to prepare as the
version that comes in a
box with neon - orange food coloring.
My
version, (shown below, packed in EasyLunchboxes), has the same ingredients as the
boxed lunch, but better quality: nitrate - free pepperoni, whole wheat bread rounds, real shredded mozzarella (not prepared
cheese product), and all natural low - sodium marinara sauce.
Cheaper
versions are often sold in cardboard
boxes but we don't advise baking the
cheese in these.
