If you have read my posts lately, you may have noticed that I have
been trying a variety of
vegan cheeses.
Guacamole stuffed rolls (or horns)
are super simple to make and they
are totally customisable — stuff them with hummus, your favourite
vegan cream
cheese, pesto or garlicky spinach,
if you
are not into guac.
If you
are not
vegan and want to make a luxury version of this, try serving it with some torn burrata
cheese on top.
If you
're worried about sodium, reduce the Bragg (or soy sauce) by half and reduce the amount of
vegan cheese used as well.
If you
're not
vegan, it
is also nice to add some good quality crumbled goat
cheese.
They aren't dairy free, but they could easily
be made so
if you swapped out the cow's
cheese for
vegan cheese.
Keep in mind,
if you use ghee, which
is clarified butter, the recipe
is no longer
vegan, but still much better for you than regular cream
cheese.
The feta
cheese is an option but
if you want to cut some calories or make this salad more paleo /
vegan friendly leave it out.
I admit that I've
been a skeptic of

My husband (
being french) said it
was missing

vegan a little sheep's milk feta or grilled halloumi would add some extra tang.

's vegan if you omit the
cheese, really tasty and fresh and it tastes sort of creamy the way the almonds / tomato blend together.
During winter I try not to buy veggies or herbs which

vegan meat equivalents, that
are great

're craving such foods.

's not easy to find
vegan cheese where I live (and it
's also heavily processed) so I pretty much never use it.
You can add greens, sundried tomatoes, tofu or even some
vegan cheese if you
're feeling a little decadent.
