I had a little bit of
the cheese mixture leftover and ended up enjoying that for a late - night snack with some triscuits.
Inspiration for this came from having a quantity of my lasagna

I compared the recipes and realized that while most of the ingredients are the same, the proportions of butter, PB, cream
cheese and sugar are really different, plus the Buckeyes use graham crackers in the
mixture as opposed to using them in the crust (for my crust I combined
leftover graham crackers / assorted stray cookies / cake ends / pop tarts that were in our freezer, and it was delicious!)
Mix
leftover cooked quinoa with eggs, vegetables and a bit of
cheese and fry the
mixture in olive oil, and you've got quinoa fritters - an excellent gluten - free side dish your family will love.
Plus, the filling
mixture (I had a bunch of
leftovers after stuffing the tomatoes) works really well as a chilled salad, with crumbled goat
cheese.
