out of lemons - too many lemon and ginger waters!
Some suggestions: instead
of tomatoes, try any juicy, slightly sweet vegetable; add some kidney beans in there; replace the cucumbers with something equally crunchy, like fresh bell peppers; if you like the taste
of raw onions, you can put some
of those in; sub
out the Feta for a goat
cheese or perhaps Parmesan shavings; add roasted
nuts or seeds; etc..
etc... Unless you just crawled
out of a rock, you know almonds may contain
nuts because they ARE
nuts, and raisins don't have cholesterol in them, how could they, unless you inject them with some debris
of your lunch

If, for whatever reason, you're interested in making a dairy - free pesto, you can go ahead and leave the
cheese out, but be sure to increase the quantity
of nuts and seeds you're using to compensate.
A big part
of the consistency
of the
cheese comes from using the whole
nuts - and with almond pulp everything has been squeezed
out except for the fibre.
Just don't leave
out the blue
cheese and some type
of nuts.
But the health -
nut in me is always on the look -
out for healthier - yet - still - delicious versions
of the classic, so when a friend mentioned that she had tried «butternut squash mac and
cheese» I was inpired to create my own squash mac and
cheese recipe.

Nut Brittle Salad
I used the full amount
of pasta (swapping
out whole grain rotini, because that's what I had on hand), doubled the spinach but did not saute it, tripled the garlic, used the whole can
of beans, increased the mustard to 2T, and added 2T each
of chopped fresh basil, finely - shredded Grana Padano
cheese, and pine
nuts.
To balance
out the carbs, you can add a bit
of protein, such as
nuts, peanut butter or low fat
cheese, where appropriate.
And I make some delicious vegan
nut cheeses that are s made
out of nothing but whole plant foods and a home made probiotic (called rejuvalac).
All you need is a blender, your
nut of choice, some water and a
cheese cloth or
nut bag to strain
out the pulp (or you can leave it in!
For my 1st charcuterie board, I was so pleased with the way it turned
out and with all
of the flavors... the
cheese / meat selections were the perfect pairings and the fruit, jam, peppadews and
nuts complimented them so nicely.
