Line a strainer with
cheese cloth or paper coffee filters, place
over a
dish to catch the juice, place the pumpkin on the
cheese cloth or filters and let sit in the fridge overnight.
But for special
dishes, like today's ricotta meatball soup, it's so worth it to make them by hand, incorporating all the seasonings that go so well in beef and pork sausage meatballs, plus a generous dose of ricotta

dish even lighter so I omitted the
cheese.

dish and then grilled under an overhead broiler to create that beautiful crispy golden crust while still being velvety smooth underneath!
Soup aside, the oil is also great drizzled on just about any kind of egg,
over tarts, on potato
dishes / salads - it even made a cracker spread with goat
cheese a little more special.
