I use more Parmesan and Mozzarella
cheese than the original recipe calls for, since I'm such a cheese - lover, and I love all that extra cheesiness!

recipe reinvents the
original by baking the eggs rather
than frying them, and adding layers of flavor with the addition of a spiced avocado spread, swiss
cheese and honey - maple ham.

cheese, softened 6 tablespoons unsalted butter, melted 1/3 cup vegetable oil 1 large egg 1 tablespoon whole milk 1 teaspoon lemon oil (if you can't find lemon oil, try using 1 tablespoon of finely grated lemon zest) 1 teaspoons vanilla extract (I used less vanilla extract
than the
original recipe so it wouldn't compete with the lemon oil.)
If using a firmer
cheese than cream
cheese I would use the
original recipe I linked to in the post because it has the proper proportion of starch to
cheese for a more feta / white
cheese like
cheese than a soft cream
cheese.
