You may notice the absence of a biscuit base in my pictures, and that's because I had some
left over shortcrust pastry so I baked it blind then put the
cheesecake mixture on top.
Remove the
cheesecake from the water bath,
leaving the water bath in oven, and spread the sour - cream
mixture evenly
over the top of the cake.
There will be crust and
cheesecake left over for another 6 cups, so if you only have one pan, refrigerate crust and
cheesecake mixture until pan is free.
