Here it's made vegan — a
mixture of flaxseed (or
chia) and
water replaces the eggs and non-dairy milk is used in place of the usual buttermilk.
I made these tonight using
chia seeds as an egg replacer (1 tbs of
chia seeds + 3 tbs of
water blended in the vitamix makes a goopy
mixture!).
Mix the remaining wet ingredients, except the 1/2 teaspoon of
chia seeds (save for sprinkling on top of muffins), into the ground
chia seeds and
water mixture.
Soak the oats, LSA / flax and
chia seeds for 1 - 2 hours or overnight, in enough
water to cover (
mixture will thicken up).
The stickiness from the ground
chia seeds and
water mixture permitted me to make these spinach muffins from my homemade gluten - free flour without using any xanthum gum, guar gum, or psyllium husk.
Let this
chia +
water mixture sit for a few minutes and it will get very gooey.

I used a
mixture of
chia seeds and warm

If you're egg - free, my favorite egg substitute it a «
chia egg» (whisk together 1 tablespoon of ground
chia seeds with 3 tablespoons lukewarm
water; allow to sit for about 10 minutes or until the
mixture gels), so give that a try and let us know how it goes!
You can pulverize sunflower seeds or walnuts with spices to make a meat
mixture, sprinkle pumpkin seeds on a salad to give it some crunch without croutons, or add
chia seeds or flaxseeds and
water together to create an egg substitute in a dish you're making.
• Breading
mixture (see recipe below) • 12 chicken drumsticks, skinless • 3 1/2 cups ice
water • 1 cup plain low or non fat yoghurt • Spray oil Breading
mixture: • 1 cup breadcrumbs • 3/4 cup all - purpose flour • 1 tbsp

Add in the
chia seed and
water mixture and process again until it looks uniform.
To make one serving, cover 2 tablespoons of the seed
mixture with hot
water or your favorite non-dairy milk and let sit about 15 minutes, until liquid absorbs and the
chia seeds gel.
Blend the
mixture with 4 oz of
water Sensitive stomach: gently boil
mixture Pour into a glass pitcher and then fill the pitcher with cold
water Stir in 4 oz of coconut
water for an electrolyte boost Stir in 1 tsp of

chia mixture Blend and store in fridge up to 4 days (need a strong blender due to unmixed gel from
chia seeds)
I'm not coordinated enough to do that running, so if you're like me, I'd recommend getting a gel flask container for your running belt (they usually come in 4 oz sizes like this one) or just dilute the
mixture with
water and consume throughout your run in a normal
water bottle, since you should be hydrating anyway — the
chia seeds shouldn't get stuck in the nozzle (at least mine didn't).
