Transfer the meat to a
chili pot,
along with the
tomato sauce and enough water to cover the meat about 1/2 inch, mixing well.
I added a small tin of
tomato paste to it
along with about 2 cups of fresh spinach, some finely chopped almonds, grated asiago and hot
chili flakes and served it over brown rice pasta for a delicious, simple supper that tasted just like summer.

The chipotle chiles add a nice smokiness and spice which,

Which means that even though this meat - free posole recipe may not be quite as authentic as others, you'll find that the powerfully spicy combination of peppers, hominy,
chili powder and cumin
along with plenty of onions and garlic in a
tomato - based broth lends a hearty and satisfying and authentic Mexican flavor.
