Chili Maple Pork Tenderloin I shared back in November was my introduction to
cooking with pork tenderloin and it turns out many of you love this cut of
meat too.
1/2 tablespoon olive oil 1/4 medium yellow onion, chopped finely 1 cloves garlic, crushed or minced 1/4 bell pepper, chopped 1/2 tablespoon
chili powder 1/2 tablespoon cayenne 1/2 teaspoon ground cumin Salt and pepper to taste 1-1/3 cups soy
meat crumbles (like Yves, LightLife, or MorningStar) Half a 15 - ounce can crushed tomatoes 1 cup
cooked kidney beans, drained (half a 15 - ounce can)
This dish is sure to make it into your regular rotation: completely satisfying
chili that
cooks in a fraction of the time it takes to make traditional
meat chili.
5 - 6 sausages of choice,

«When I have leftover
cooked meat from a roast or a stew, or even leftover steak,» he says, «I often chop it and use it to make stuffing,
chili or meatballs like these.»
Even though the combination of
meat and chile peppers in stew - like dishes is common in Mexican
cooking,
chili did not originate in Mexico, and Mexicans flatly deny any link to the dish.
Before I had Paloma and
cooked with
meat, I would often make two different pots of
chili — a
meat based one as well as the one below, for Paloma's vegetarian sister.

cooked meats» — even more reason to skim the fat before re-heating
chili.

Gochujang is a fermented paste made of
chili peppers, soybeans, rice, and salt that's frequently used in Korean
cooking to adorn
meat, vegetables, and rice dishes or flavor stews and soups.
Stir in ground
meat and season with cumin,
chili powder, dried oregano, salt, and pepper; stir occasionally to break up the
meat and
cook for 6 minutes, or until
meat is browned.
