Chili, along with plenty of Colby jack cheese, green peppers, sour cream and
if you can handle the heat, jalapenos!
Add the garlic and cook for another 2 minutes, then add the squash, chopped serrano
chili, and coconut milk (
if you're using regular coconut milk, skim off the cream on
top - don't throw it away, you'll need it later;

chili oil on
top, as shown in the pic.
Toss in the cashews and onions (

top with sesame seeds and
chili pepper flakes (
if using).
I added some super fun
toppings to mine, but
if you are short on time, the
chili is delicious solely on its own.
If you have extra, add a couple more pieces of the cheese on
top of the warm
chili.

But we also like to eat it in rice bowl form, with black beans, avocado slices, some fresh cilantro, and even a few pieces of sweet pineapple, and
if you can find some
chili - lime cashews those are pretty great sprinkled over the
top too!

1 large white onion 1 cup raw cashews, soaked in water for a couple of hours or overnight, then drained 3 cups unsweetened soy milk 1/2 cup garlic, boiled soft (roughly 17 - 18 cloves) 1/2 cup white wine 3 tablespoons nutritional yeast 2 tablespoons red or white miso 1 teaspoon onion powder 1 teaspoon smoked paprika 1/2 teaspoon black pepper 1/2 teaspoon white pepper 1/2 teaspoon salt (omit
if sodium is an issue) 1/2 teaspoon turmeric (optional, for color) Optional garnishes: Crumb

chilis, sriracha sauce
Make sure all of the
chilis are submerged in the hot water, rotate the
chilis from
top to bottom after 15 minutes
if necessary.
Dust the
top and sides with cocoa powder,
if desired, and with a pinch or two of spice (cinnamon, ancho
chili powder and / or instant coffee powder).

toppings: avocado, corn chips, cilantro, cashew cream, lime juice, tomatoes or salsa, green onion
Divide among bowls;
top with mint, dill,
chili oil, and fried garlic and MSG,
if using.
Top with shredded cabbage, cherry tomatoes, sliced cucumber, green onions, mint, cilantro, basil and
chili (
if using) and gently toss with your hands to combine.
Use a slotted spoon (to avoid adding extra water) to add the beans to the vegetables and rice, sprinkle on the remaining teaspoon of
chili powder and 1/2 teaspoon of cumin, and grind more sea salt and black pepper on
top if desired.
Top each sandwich with cilantro, tomato, radish,
chili sauce, and daikon pickles
if using.

If you've got a bit more time, bake the sweet potatoes, and then heap mounds of this savory chickpea
chili — flavored with spices, garlic, and fresh red chiles — on
top, along with a spoonful of yogurt.
If you want to bring on the heat, put
chili flakes on
top.

top with either
chili powder, cacao nibs, coconut, or goji berries.
