Chilli powder is not JUST a
blend of ground
chillies.
In a bowl, combine the hung yogurt,
chilli powder, roasted cumin
powder, coriander
powder, garam masala, kasoori methi, oil and salt to taste and whisk thoroughly so that all the spices
blend well.
To make the marinade,
blend the dried
chilli, mushroom and black peppercorns to a
powder in a spice grinder and add to a medium bowl.
Then add all the spices — turmeric
powder, red
chilli powder and the kadhai spice
blend.
Add the chickpeas, parsley, coriander (cilantro), salt,
chilli powder,
chilli, spinach, lemon juice, turmeric and cumin to the bowl of the food processor and pulse until they are roughly
blended but not puréed.
