Note that the beets in the photo are pink and white
stripped chioggia beets because I grew those — but if you use red ones your dish will have a deeper color.

I'm not sure when beet season is, but recently I was able to find three different types of beets in the local grocery stores: «regular» red beets, golden beets, and
lovely chioggia beets.
When I saw the rainbow
sweet Chioggia beets, I imagined them with juicy mildly acidic blood red oranges, pale green mellow avocados and crisp white endives.

The thing
about chioggia beets is that when you cook them, that beauty all but disappears into a dull pinky beige mass.
VARIATION: For a simanim salad (a salad that incorporates many of the symbolic foods traditionally eaten on Rosh Hashanah), use the following ingredients along with the apple and honey vinaigrette: mixed greens, 1 honeycrisp apple, 1/2 cup pomegranate seeds, 1 julienned carrot, 2 chopped medjool dates and
shaved chioggia beet.
Ingredients: Baby red beets, baby gold beets, shallot, sherry vinegar, fresh thyme, kosher salt, Dijon mustard, black pepper, extra-virgin olive oil, watercress or arugula,
baby Chioggia beets, goat cheese, unsalted pistachios
You can't see — because your eyes are closed, and you're singing — that I have what looks like blood on my hands; and you don't know that the motel has no A / C, and no hot plate, and the blood on my hands is
just chioggia beet, and not blood.
After picking up all sorts of colorful bumpy heirlooms at the farmers market and a bunch of
striped Chioggia beets, I planned to keep the ingredients raw for a simple lunch on a scorcher of a day.
To make this dish extra colorful, I opted for a mix of orange and purple sweet potatoes and
chioggia beets, which are striped inside and won't stain your hands nearly as much as regular beets.

Chioggia beets 1 pound heirloom tomatoes, sliced 2 tablespoons plus 1 teaspoon olive oil 3/4 teaspoon kosher salt 3/4 teaspoon black pepper 1 tablespoon fresh lemon juice 1/4 teaspoon Dijon mustard 1/4 cup crumbled feta 1/4 cup roughly chopped walnuts 1 tablespoon fresh chives
Transfer to a platter and garnish with the chervil leaves and
Chioggia beets, then serve.
