In food processor, combine
chipolte pepper with 1 tablespoon adobo sauce, tomatoes, garlic, cumin, cinnamon and salt and process until smooth.
I see this adobo sauce, but I remember the t.v. show having a can of chiles in
chipolte sauce.

chipolte chiles 1/2 cup sun - dried tomatoes 3 tbsp Ancient Organice Ghee 2 medium yellow onions, chopped 4 cloves garlic, minced 1 fresh red chile, minced 2 tsp ground cumin 1 tsp oregano 2 carrot, diced 2 stalks celery, diced 1 1/2 tbsp mirin 2 tsp sea salt
If you like it hotter add some chopped green hot chilis,
chipoltes in adobo, cayanne powder, etc. with the other wet stuff.
I
love Chipolte, snap peas and veggie chili, and I love the protein count.
I chose to go for the medium
smokey chipolte but only used 1/4 tsp which gave a nice tingle on the tongue.
I am not a huge
chipolte fan but I absolutely love this salsa.
I changed a few things, I used Ground Turkey and I added a Table Spoon of
Chipolte Chile Spice, but it was amazing.
In all fairness, it did need a wee bit of tweaking: used serranno pepper as that is what I had on hand and left half of the seeds in for added heat; added 2 Tbs water and 2 Tbs of the tomato sauce to the filling as it was quite dry and I did not think it would set up right without added moisture; added a pinch of
ground chipolte pepper to the filling and spread about 1 / 2c more cheese on top.
Add beans, panko, cilantro, lime juice, liquid smoke, cumin, chili powder,
chipolte chili powder, salt and pepper.

tsp chipolte powder 1 tsp cumin 1/2 tsp black pepper 1 C low - fat shredded sharp cheddar
Used Coconut Amino (soy - free sauce) instead of soy sauce and
chipolte hot sauce.
This is the best priced, most
tasty chipolte sauce I have ever encountered.
I did add one
extra chipolte pepper and added a tablespoon of liquid hickory smoke.

I did not find this overly spicy: I used 2 poblano chili, about 6 - in long each; 3 zucchini, about 8 - in each; 1/2 cup quinoa; and because I could not find the fire - roasted tomatoes with
chipoltes, I added a minced chipolte with a bit of adobo sauce instead.
I guess a lot of you don't realize that except for the squash and tomatoes, this recipe is pretty close to the Original San Antonio chili which many feel is the first and original chili in Texas, If you want it spicier add a dried serrano or a couple jalapeno (or
chipolte) chilies.
