It's pretty much a classic
chocolate chip muffin recipe, with
coconut flour filling in for all - purpose flour.
But seriously, I forgot about
coconut oil and am now dying to try it in
chocolate chip cookie.
Then when you're ready to make your frosting, you only use the fat from the
coconut milk, melt it together with a bag of
chocolate chips (I used dairy free ones), add a little vanilla and salt to taste and stick it in the fridge to re-solidify until ready to use.
I tried Lovely Brownie Bliss Baking Mix — let me just say between the organic dark
chocolate chips,
coconut oil and rich cacao powder, these decadent gluten - free brownie had to HIDDEN from the family for my own personal enjoyment.

Melt the
chocolate chips in a saucepan over medium - low heat and drizzle it on top of the
coconut and then let the bars chill for 30 minutes in the fridge, then remove and cut into bars.
I subed 1 cup almond flour (spooned into the measuring cup) for the
coconut flour since we didn't have any and did walnuts instead of
chocolate chips and they were oh so yummy.
When you put the bombe back into the freezer for the last time, combine the
chocolate chips and
coconut oil in a glass bowl and microwave for 1 minute.
You add in the
coconut flour with the
chocolate chips.

coconut, an equal mix of AP, 10 grain & rye flours, knocked the maple syrup to 1/4 cup, and added a 1/4 cup of dark

I did add a tiny bit of
coconut sugar into the mix and some mini
chocolate chips.
Sprinkle the top evenly with a few more semi-sweet
chocolate chips, white
chocolate chips and / or
coconut chips.
Tonight I had leftover
Coconut Red Lentil Curry, a salad and a
chocolate chip cookie.
Thursday: Girl Scout Gumbo (hamburger, vegetable soup, cheese, onion, green pepper, served on Fritos — I have a gluten and diary free version), Milky Way Salad (Milky way pieces, apples, bananas, cool whip — We have vanilla
coconut - based yogurt with apple slices and gluten and dairy free
chocolate chips), box oven brownies.
