batter between prepared
muffin cups and sprinkle about 1/2 teaspoon
chocolate chips in the very center of each
muffin (chips will spread out as the
muffins bake and rise).
To enjoy this recipe as a breakfast
muffin, stir
chocolate chips or blueberries into the
batter and omit the frosting.

batter between 6 - 8
muffin compartments (when you're finished with all of the
batter, including the
chocolate, your
muffin compartments will be full, so eyeball it that way).

batter is used up (mine are almost completely full), then sprinkle the remaining 1/4 cup of dark
chocolate chips on top of the
muffins, gently pressing down if need be so they stick.

- If you hate frosting / don't want to make it / can't make it, you can add 65g (~ a slightly heaped 1/3 cup) of semisweet
chocolate chips to the
batter (sprinkle them onto the
batter once it's in the
muffin cups, then poke them into the
batter a bit)-- this adds the same number of calories to each cupcake as the frosting
Just prep one banana
batter, one
chocolate batter, layer, swirl, bake, and lo and behold: soft, moist, delicious, yummy, chocolatey
muffins.
I also added 3/4 cup mini
chocolate chips to the
muffin batter.
You can toss in a cup of chopped nuts, raisins, or
chocolate chips if you want, or put the
batter into
muffin tins and make banana nut
muffins instead.
Add the
chocolate chips and stir until just combined; over-mixing will create a tough
batter and therefore produce dense, heavy
muffins.
These
muffins are studded with dried sour cherries and dark
chocolate chips, which is complemented perfectly with the orange zest running through the
batter.
* You can not let Coconut flour sit long, as soon as you mix this
batter, ensure you put it right into the oven * If you want
chocolate muffins, you can add between 1/4 - 1/2 cup of cocoa powder to your taste liking * You can store these in an airtight container for 3 days * You can substitute the butter with Coconut Oil but I haven't tested it and 8 tablespoons would probably be too oily.
Finally, divide
batter between 6 - 8
muffin moulds and garnish with dark
chocolate chips or chopped dark
chocolate (optional).
Add
chocolate chips and use a spatula or spoon to gently fold the
chocolate into the
muffin batter.
Fill each
muffin tin at least 3/4 the way full or until all the
batter is used up (mine are almost completely full), then sprinkle the remaining 1/4 cup of dark
chocolate chips on top of the
muffins, gently pressing down if need be so they stick.
Gently fold 1 cup of dark
chocolate chips into the
batter (reserving the rest for the top of the
muffins).
