chocolate in bottom, freeze until firm, dollop in some almond butter (can sweeten with honey if needed) and top with more

I've made a few
too many batches of double
chocolate muffins since I started this blog, but it's taken this long to finally come up with a version that totally nails it.
Well, they
too were created because I 1) craved
chocolate (the ultimate way to beat winter blues) and 2) knew that a
chocolate bar or a bought
chocolate muffin wouldn't do.
I'm not a fan of
chocolate chip
muffins & I didn't want it
too sweet.
As a kid, I slathered it on saltines alongside
chocolate milk during cartoon - drenched Saturday mornings; I ate it in sandwiches for lunch throughout my teen years; once I acquired my own kitchen in which to experiment in my 20s, I packed it into celery hollows for snacks, baked it in cookies,
muffins or the occasional Rice Krispie square; later, I ate it straight out of the jar for an immediate PMS pick - me - up, or after a late night when I was
too tired to cook.
My boyfriend, who eats «normal» baked goods like
chocolate muffins on a regular basis, thought they tasted
too «earthy», but I am a fan & will absolutely make them again when I am craving a decadent treat, or for a special occasion for a Paleo or GF friend.
I'm not going to make frosting this time (
too much sweet stuff for me) so I will just think of them as
chocolate muffins, and am going to eat some with almond butter.

chocolate muffins, you can add between 1/4 - 1/2 cup of cocoa powder to your taste liking * You can store these in an airtight container for 3 days * You can substitute the butter with Coconut Oil but I haven't tested it and 8 tablespoons would probably be
too oily.
